Well look no further than this sneaky, bright green, semi-nutritious, and shockingly edible muffins. Grinch muffins are a favorite in my house and I don’t think they’ve caught on that they are packed with spinach.

  • Call them “Grinch Muffins” at Christmas and “Hulk Bites” the rest of the year. Branding matters, people.

  • Add chocolate chips if you’re in survival mode. They’ll eat anything with chocolate chips.

  • Make a double batch and freeze half. One for now, one for next week when you’re too tired to cook and someone requests “green muffins” again at 6 AM.

  • Serve with milk, tears, or wine. Your call.

In a large bowl use a whisk to sift the all purpose flour, baking powder, baking soda, and salt.

In a blender or food processor combine the bananas, spinach, syrup, milk, egg, applesauce, and vanilla extract until smooth.

Add the wet ingredients to the whisked dry ingredients and combine.

Fill each muffin cup about 1/2 - 3/4 full (depending how big of muffins you want).

Bake for 20-25 minutes until toothpick in the center comes out clean.

2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon salt

6 - 9 ounces of baby spinach

3/4 cup maple syrup

1/2 cup of milk or unsweetened almond milk

1 large egg

1/4 cup unsweetened applesauce

1 1/2 teaspoons vanilla extract

1 1/2 cups smashed bananas (about 3 large ripe bananas)
